Healthy Banana Pancakes

Yes, I am obsessed with sweets. Aghhh I just can’t help myself!  But that’s why I found the solution. I make them healthy! Hope you’re ready guys, this is a quick one! You will need : 3 bananas 6 eggs 2 tablespoons gluten-free flour ( coconut, almond, millet…whatever you like) 200 mL almond or coconut milk Note : This amount is for 3 portions   Mix all ingredients until smooth. Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, and turn each side when it’s brown. When you’re done, just pour honey, maple or agave syrup over them, and serve with fruits, jam or apple and mango purée ( THE BEST!) Thank  you for your existence pancakes. Hope you’ll enjoy! Little Raw Vegan Cake Bites

Today, I was experimenting with some nuts, organic cacao powder and my favorite fruit! And the result I got was these perfect refreshing little raw cake bites.     What I used : 1 cup hazelnuts or almonds hand full of sunflower seeds 2 tbl spoons cacao powder hand full of peanuts or pistachio hand full of raisins 1 tbl spoon coconut oil blueberries or raspberries 2 tbl spoons chia seeds     How to do it : Blend hazelnuts or almonds with sunflower seeds, peanuts or pistachio, and raisins. Add coconut oil and cacao powder. For the second mixture, blend raspberries or blueberries with previously soaked chia seeds. Chia seeds need to be like jelly. If you don’t have chia seeds, you can mix the fruit with cashews. Add honey if you like. I made 3 cups with raspberries and four with blueberries. Add the first nut layer in the cup, then add the second, fruit layer. I made 4 layers, but you can make as much as you want 🙂 Have a good …

My lunch for today

I am absolutely  obsessed with the new product I found in my favorite health store. Ghee Butter! Yesss! For those of you who don’t know, it is a clarified butter that originated in ancient India and is commonly used in South Asian cuisines and traditional medicine. It is the main ingredient in some of the Ayurvedic medicines and Indian food. Ghee is pure butterfat cooked longer until all moisture is removed and the milk solids are caramelized and then filtered out. While butter is not necessarily bad for you, ghee has health benefits that make it healthier than butter. So, my lunch today was: Sesame ghee butter, gluten free bread, asparagus, ricotta cheese, vegetable salad, and of course, my cold pressed juice!      

Tour de Sicily

Hello, my little blossoms! I’ve been away for a little while because I’ve been on a road trip around Sicily. I can’t even describe how beautiful that Island is! It is definitely soo different than any other part of Italy. Sicilian delicacies, old, colorful, modest houses, beautiful sand beaches, baroque architecture, makes it the perfect destination for a vacation. It is a land of extreme contrast, where glowing volcano from mount Etna is full of snow, and where the Saharan sand  is being swept to Sicilian beaches. My boyfriend and I decided to rent a car which was a great idea but Goshh those Italians, and especially Sicilian people are the worst in traffic regulations, but probably the best drivers on the planet! It was a real challenge to drive in that circus! The car and an old man from the rent-a-car agency waited for us in the parking lot on the Trapani airport. Coco-choco-loco cake

I just can’t get enough of coco! Take a 30 minute break from everything you are doing and go make yourself a delicious chocolate, coconut cake. It is so simple and yummyy! What you need : 4 eggs 112 g coconut flour (you can use coconut crumbs) 70 g coconut sugar 80 g coconut oil 250 mL coconut milk 120 g dark chocolate 10 g gluten free baking powder Instructions : Preheat your oven to 175ºC/347ºF/gas 4. Rub a 27cm cake tin with butter. Separate egg yolks & egg whites. Beat the egg whites until they form soft peaks Mix the egg yolks with sugar until you have light brown cream Melt coconut butter into oil on the stove, than add to the cream. Add milk, baking powder and coconut flour and mix everything together. You can add a small amount of cocoa powder or melt the 20 g of dark chocolate.  At the end add the egg whites and mix. Put the mixture in the cake tin and bake for 20-25 min. When cool, melt …

It is declared the most beautiful city in Europe and has its two unique attractions – the sound-and-light spectacle of the Sea Organ and the Sun Salutation – need to be seen and heard to be believed!    Krka Waterfalls in  Krka National Park protects the ecologically important area around the middle and lower sections of the River Krka. As the river flows down from the upper reaches, it meets a series of lakes and rapids. It is a magical place with 200 different bird species, fishes and plants. Perfect healthy poppyseed cake

Today I wanted to sweeten up my day with something healthy but OH SO DELICIOUS! I want to share with you this perfect gluten free, lactose free chocolate, poppy seed cake recipe. What you need : 6 eggs 180 grams  palm sugar or any other natural sweetener 260 g  coconut butter (with or without smell&taste) 280 g  minced poppy seeds 2 teaspoons of rum 5 tablespoons of coconut milk 140 g black chocolate (80 or 90% of cocoa) How to do it : Preheat your oven to 180ºC/350ºF/gas 4. Rub a 27cm cake tin with butter. Separate egg yolks & egg whites. Beat the egg whites until they form soft peaks Mix the egg yolks with sugar until you have a cream this color Add 180 g of coconut butter into the mixture (keep the rest of it for the glaze). Than add minced poppy seeds, rum, milk and chocolate ( grate only 40 g into the mixture!). Mix everything together. Add your soft peaks egg whites and mix together. Put into the cake tin and …
