Little Raw Vegan Cake Bites

Today, I was experimenting with some nuts, organic cacao powder and my favorite fruit! And the result I got was these perfect refreshing little raw cake bites.     What I used : 1 cup hazelnuts or almonds hand full of sunflower seeds 2 tbl spoons cacao powder hand full of peanuts or pistachio hand full of raisins 1 tbl spoon coconut oil blueberries or raspberries 2 tbl spoons chia seeds     How to do it : Blend hazelnuts or almonds with sunflower seeds, peanuts or pistachio, and raisins. Add coconut oil and cacao powder. For the second mixture, blend raspberries or blueberries with previously soaked chia seeds. Chia seeds need to be like jelly. If you don’t have chia seeds, you can mix the fruit with cashews. Add honey if you like. I made 3 cups with raspberries and four with blueberries. Coco-choco-loco cake

I just can’t get enough of coco! Take a 30 minute break from everything you are doing and go make yourself a delicious chocolate, coconut cake. It is so simple and yummyy! What you need : 4 eggs 112 g coconut flour (you can use coconut crumbs) 70 g coconut sugar 80 g coconut oil 250 mL coconut milk 120 g dark chocolate 10 g gluten free baking powder Instructions : Preheat your oven to 175ºC/347ºF/gas 4. Rub a 27cm cake tin with butter. Separate egg yolks & egg whites. Beat the egg whites until they form soft peaks Mix the egg yolks with sugar until you have light brown cream Melt coconut butter into oil on the stove, than add to the cream. Add milk, baking powder and coconut flour and mix everything together. You can add a small amount of cocoa powder or melt the 20 g of dark chocolate.  At the end add the egg whites and mix. Listen to your body

For me, gluten, lactose and my body are not getting along. Did you know that approximately 65 percent of the human population has a reduced ability to digest lactose after infancy. Also, gluten makes us bloated, tired, moody, and for some people it is even dangerous. It causes celiac disease – an autoimmune disorder in which the body reacts to gluten – it’s a classic food allergy marked by skin, respiratory or gastrointestinal reactions to wheat allergens. I don’t have celiac disease or allergies, but I have listened to my body when it wasn’t happy everytime I drank cow milk, ate bread, pasta or every other thing with gluten. I was bloated, lazy, tired and that’s something I can’t stand. I like to have my digestion regular and proper! My story begins when I started my teenage years and had a lack of confidence because of my looks, especially because I had a severe acne problem. Acne is one of the biggest and most widespread problems in Western countries that more than half of teenagers and also many adult women and men have to deal with. But it is not just an aesthetic problem, it is a mental problem too. It can cause a lot of insecurities, sadness, even depression.
