My lunch for today

I am absolutely  obsessed with the new product I found in my favorite health store. Ghee Butter! Yesss! For those of you who don’t know, it is a clarified butter that originated in ancient India and is commonly used in South Asian cuisines and traditional medicine. It is the main ingredient in some of the Ayurvedic medicines and Indian food. Ghee is pure butterfat cooked longer until all moisture is removed and the milk solids are caramelized and then filtered out. While butter is not necessarily bad for you, ghee has health benefits that make it healthier than butter. So, my lunch today was: Sesame ghee butter, gluten free bread, asparagus, ricotta cheese, vegetable salad, and of course, my cold pressed juice!      

Coco-choco-loco cake

I just can’t get enough of coco! Take a 30 minute break from everything you are doing and go make yourself a delicious chocolate, coconut cake. It is so simple and yummyy! What you need : 4 eggs 112 g coconut flour (you can use coconut crumbs) 70 g coconut sugar 80 g coconut oil 250 mL coconut milk 120 g dark chocolate 10 g gluten free baking powder Instructions : Preheat your oven to 175ºC/347ºF/gas 4. Rub a 27cm cake tin with butter. Separate egg yolks & egg whites. Beat the egg whites until they form soft peaks Mix the egg yolks with sugar until you have light brown cream Melt coconut butter into oil on the stove, than add to the cream. Add milk, baking powder and coconut flour and mix everything together. You can add a small amount of cocoa powder or melt the 20 g of dark chocolate.  At the end add the egg whites and mix. My story begins when I started my teenage years and had a lack of confidence because of my looks, especially because I had a severe acne problem. Acne is one of the biggest and most widespread problems in Western countries that more than half of teenagers and also many adult women and men have to deal with. But it is not just an aesthetic problem, it is a mental problem too. It can cause a lot of insecurities, sadness, even depression. When it first started I thought I could handle it, but after a while it got worse and I was devastated. My confidence was ruined. I tried EVERYTHING!
